Extra crispy fried chicken recipe is one of the most popular recipe in all over the world, especially in South America. It is made with chicken thighs, legs, breasts and wings, and some ingredients such as buttermilk, black pepper, ginger-garlic, red chili powder, rice flour and etc. I am going to cover my recipe in quit easy process. So that everyone can make it at home by following my recipe instruction step by step.
Take a whole chicken. Clean it. Cut the chicken with skin into 10 pieces: 4 breasts, 2 legs, 2 thighs, and 2 wings.
Dry all chicken pieces with a paper towel or tissue.
Properly, mix all the ingredients such as coriander powder, crushed black pepper, red chili powder, garam masala and salt in a big bowl.
In a large bowl, combine all chicken pieces, mixing ingredients, green chili paste, cumin paste, ginger-garlic paste, lemon juice, buttermilk/yogurt, and mustard oil. Now mix all together and put in the fridge for at least 4 hours but overnight is the best to make juicy on the inside of the fried chicken.
Mix all rice flour 8 tbsp, red chili powder 2 tbsp, crushed black pepper 1tsp, and salt to taste in a big bowl.
Now coat both sides of chicken with this mixing flour and put it another bowl or tray. One by one coat all the chicken pieces by this process.
Now your chicken is ready to fry.
Temperature is a crucial part to fry chicken. Your oil temperature should be around 350 to 375 Fahrenheit for proper crispy fried chicken. In a big pan heat oil to 375 Fahrenheit.
Now put 2 or 3 pieces of chicken into oil and fry them for 8 to 9 minutes each side.
Remove chicken from oil and let it drain on a wire rack for 3-4 minutes.
Fry all the chicken by using the same process.
Now serve it with hot tomato ketchup. If possible, you can serve with homemade chicken fried rice and Chinese chicken curry. Now enjoy your food!
