Super Crispy Homemade French Fries Recipe
Homemade french fries recipe with images and video, and instructions are quite easy to catch in mind. So, friends, follow my recipe instructions step by step and make crispy on the outside and soft or tender on the inside.
The potato french fries is known as “French Fries” in North America, “Potato Chips” in British and Commonwealth, and “Potato Finger Chips” in Indian[Wiki].
When I go to the market for shopping with my family, I love to have potato french fries very much. I think we all love french fries, isn’t it?
We love to enjoy the french fries with tomato ketchup or you can use homemade sauce that makes with mayonnaise and tomato sauce or ketchup.
In this homemade french fries recipe, I have described step by step with images. To make classic french fries, don’t skip any step that I have explained here.
All potatoes are not appropriate for making crispy and crunchy potato french fries. High starch potatoes are the best for crispy and fluffy french fries.
You have to select perfect old potatoes which are strong outside and less amount of moisture inside. You should try to avoid new potatoes which is full of moisture inside.
Prepare The Potatoes
First, wash all potatoes and peel them by potato peeler. You can cut potato with skin, it doesn’t matter. Potato skin increases crispness, but for this, you should wash potatoes properly.
Cut and Soak Potato Slices
For slice potatoes, you can use potato cutting machine or you can slice potatoes into ½’’ sticks by using a sharp knife.
As we are going to make homemade french fries recipe, so we cut all potatoes by hand.
After cutting all potatoes, put them into a large bowl with cold water. You have to remove all starch from potato slices by washing two or three times. Soak them for at least an hour.
Boil and Dry
Now take a deep pan for boiling potato slices. Add fresh water, salt and all potato slices.
Heat the pan with high flame and boil potatoes for 10-12 minutes. You have to boil the potato slices 70%-80%: not 100%.
Now remove all water and dry all potato slices by using kitchen towel or table fan.
Double Method Frying
To make crispy and fluffy french fries, we have to fry them twice.
Heat oil in a deep frying pan on a medium flame. When temperature will increase at approx 300 Fahrenheit, fry all slices in batches 5-7 minutes.
Now remove all french fries from oil and put them on a tray or on a plate. This french fries are not suitable for having.
Why? Because, we have to put them in the fridge for at least 6 hours and after fridging, we will fry again.
We can preserve them for a long time.
Now we will fry all french fries until golden color. This fry is also known as flash fry.
Heat oil at approx 400 Fahrenheit and fry all french fries in batches for golden color and crispy. Remove all fries from oil and put them in deep steel bowl.
How to Serve Homemade French Fries
In a deep steel bowl with french fries, add salt to taste and mix them quickly serve with homemade tomato sauce or with mayonnaise chutney.
Which Potato is The Best For French Fries
Potato is the main ingredient in this homemade french fries recipe. That’s why you have to use perfect potato.
As you are going to make a classic and crispy french fries, you should select the best potato.
For making a KFC and McDonald style french fries, you have to pick the russet potatoes. The thing is when you are going to select potato, you should remember that potato has less sugar and full of dry matter(less water).
How to Cut The Potatoes
First, wash selected potatoes properly. You can peel potatoes with a sharp knife or you can use a potato peeler.
If you don’t want to peel the potatoes, you can skip it. With skin potatoes is more crispy and tasty.
We have two ways to slice potatoes; one is by hand and another is by potato slicing machine.
Here I slice my potatoes by hand with a sharp knife. As I am going to make homemade potato french fries, I prefer using a sharp knife to slice the potatoes.
On the chopping board cut all potatoes into ½-inch to ¼-inch slices. Then set those slices flat and cut into sticks of the same size for french fries.
You should remember all sticks is to be balanced otherwise it cannot fry and cook evenly on the outside and on the inside.
Wash and Soak The Potatoes
Washing and soaking is the key fact to get super crispy like KFC, Mcdonalds or other restaurants.
You have to wash the potato sticks at least three or four times to remove sugar and extra starch.
After washing potato slice three times, we need to soak the potato sticks in cold water for at least an hour.
This helps the potato slices super crispy on the outside and moist or juicy on the inside.
Boil The Potato Sticks
After soaking in the cold water, you should remove the water and put them in a normal water and add salt 1 tbsp per potato (Big size potato). Now heat the water for 3-4 minutes.
Temperature will be 75 deg. Now put it to low flame and let them for 15 minutes. In this step pectin will activate in the potato slices. For this reason potato slices don’t be brown and soft.
Now we have to change the water. In another bowl add water and potato slices and boil them for 6-7minutes.
Now remove the water and put all slices on the kitchen towel. These all sticks are boiled and ready to dry.
Dry The Potato Sticks
Potato slices are now boiled. For getting extra crispy, we will dry all potato sticks using table fan or kitchen towel and tissue.
In this step, we need at least an hour to remove extra water and making them to dry. After drying, it looks like leather. If potatoes are not properly dry, it can not be extra crispy.
Now Potato slices are ready to fry.
Frying Method of Homemade French Fries Recipe
Frying is an important part of this recipe. Crispiness and juiciness depend on how you fry the potato slices. For extra crispy french fries, we have to fry them twice.
The First Frying Method
In this step heat oil in deep frying pan on medium flame. Put the potato slices in oil and fry them until crispy. Not cooked completely. It takes around 5-7 minutes it depend on your oil and stick size.
Remove from oil and put them on a tray or plate. Now the fries are not ready to eat. We have to fry them again after fridging. Because of fridging extra moisture is evaporated from this potato slices and another reason is, if you fry things which is frozen, it will be more crispy.
The main thing is, you can preserve them for a long time in the deep fridge. We have to fridge them for at least 6 hours.
Double Frying for Extra Crispy
Without double frying, your french fries won’t be crispy and crunchy. So it is quite vital method for getting crispy on the outside and juicy on the inside of the homemade french fries recipe.
Heat oil in a deep frying pan on high flame and carefully put those frozen french fries. Fry them until the golden color. Now remove from oil and put them in a deep steel bowl.
Important Tips to Make Homemade Super Crispy French Fries
Washing the potato sticks at least three times is the most important issue to remove the extra starch from potato surface. It helps french fries to be extra crispy.
When you slice potato, make sure your all potato stick is to be equal size.
The most important tip is boiling potato sticks. If you boil the potato slices, your french fries will crispy on the outside and moist on the inside.
First fry oil temperature should be at approx 300 Fahrenheit and Double fry oil temperature should be at 400 Fahrenheit.

My homemade french fries recipe is very easy to understand and quite different from others. If you properly follow my recipe instructions, I damn sure your french fries will be super crispy and soft on the inside.
- 5 pcs Russet Potato
- Vegetable Oil for deep frying
- 5 tbsp Salt (When boiling potato slices)
- Salt a pinch
- Tomato Sauce
Select the russet potatoes. Wash and peel them by hand with a sharp knife or you can use a potato peeler.
Now slice them into ½-inch to ¼-inch slices. Then put down those slices flat and cut into sticks of the same size for french fries.
After slicing properly wash them three times.
Put them in a large bowl with cold water and soak them for at least an hour.
Then in a deep pan with normal water, add 1 tbsp salt per potato. Now heat the water on the medium flame until temperature 75 deg. It takes around 3-4 minutes. Change the flame medium to low and let them for 15 minutes.
Now remove the water and add water again. Heat the water on high flame for 6-7 minutes.
Check the potato slices, if it is boiled, remove water and put all potato slices on the kitchen towel. Dry them by the tissue or fan or sunlight.
Heat oil in a deep frying pan on a medium flame. When the temperature will increase at approx 300 Fahrenheit, fry all slices in batches 5-7 minutes until crispy. Remove all french fries from the oil and put them on a steel tray or a plate.
Heat oil at approx 400 Fahrenheit and fry all french fries in batches for golden color and crispy. The frying time depend on your taste how much crispy do you love to eat. Remove from oil and put them on a deep steel bowl.
