Step 1:

First, select the best potato and wash them well. After that cut the potato into wedges. With one potato, we will get 8 potato wedges. In this recipe, I have taken 3 potatoes. Cut all the potatoes and we will be able to get a total 24 potato wedges.

In a large bowl with all the potato wedges, add with some cold water, salt and MSG. Now cover it with a polypaper and put it in the normal freezer for at least 12 hours.

Step 2:

After 12 hours, take out potatoes from the freezer and drain it. Now take a deep pan with some water and turn on the flame on medium-high heat. After boiling water, add potato wedges and wait until 80% cooked. Now drain it and let it cool.

Step 3:

In a small bowl, add all the ingredients and mix them properly.

Now grab 1 cup of flour and our seasoning blend mix and add Roughly 1 and 1/2 cups of water until you get a pancake batter consistency dunk each of your fries into the batter let them drain off then set on parchment paper and put it in a freezer for 30 minutes.

Step 4:

Now take out all the potato wedges from the freezer. Heat oil in a deep non-stick pan and fry all the wedges until golden color. After frying all the potatoes, take them in a deep steel bowl and sprinkle some salt or chaat masala on it and mix them well. Now your KFC style potato wedges are ready to serve. Serve it with tomato sauce.

Another process is to bake in an oven. For this step, preheat the oven to 400 deg F and place all the potato wedges on a baking sheet. Bake for 40-50 minutes. Now your potato wedges are ready to serve.

All potatoes are not appropriate for making crispy, crunchy and spicy potato wedges. The taste of potato wedges depends on choosing the best potato. Medium-starch potatoes are the best choice for potato wedges. Medium-starch potatoes are all-purpose potatoes and have more moisture than high-starch potatoes.
