In this easy fried chicken recipe, I wanted to show you how we can make restaurant-style especially KFC style fried chicken at home step by step.

How do you cut a chicken for frying?
The ideal pieces of chicken are a crucial part of making tasty fried chicken. We shouldn’t remove the skin from the chicken pieces. It helps to be crunchy on the outside of chicken and moist on the inside of chicken pieces.
- Before cutting up chicken, sharp a knife carefully.
- First, put the whole chicken on the clean cutting board.
- Then remove both legs at the thigh joint. Now cut between the leg and thigh.
- Pull each wing away from the body, cut off the wings at the joint. Repeat with the other wing.
- Now separate breast from the back.
- Cut down in the center of the breast and make it two pieces. Each breast cut into 2 pieces.
- Total of 10 pieces of chicken is perfect for frying.
- Use the back and rest of the part for chicken stock.
- If you are not comfortable with cutting the whole chicken at home, you can buy pre-cut pieces from any local market.
How do you marinate chicken?
Marinating is a crucial part of fried chicken recipe. Outside crispy and inside moist depends on how you marinate the chicken and how long you put them in the fridge. First, mix all the dry ingredients in a bowl and then mix chicken and other ingredients together. Cover with thin plastic and put them in the fridge overnight. If you have not much time you can do it for at least 4 hours but overnight is the best.
Which is the best cooking oil for frying chicken?
We should consider when choosing an oil for frying chicken. There are different types of oil such as lard, vegetable shortening, mustard oil, olive oil, coconut oil, peanut oil, canola oil, etc. Traditionally, lard is used for frying chicken getting South American smoke. But I have used vegetable shortening, which is the best method for deep frying chicken.
What is the best temperature to fry chicken?
The oil temperature is important to fry chicken. If you fry chicken with cool temperature, it will turn out fatty and if you fry with very hot temperature, it will burn outside and not cooked inside. The ideal temperature is 350 to 375 Fahrenheit. We should not fry chicken below the 350 and cross the 375 Fahrenheit.

Extra crispy fried chicken recipe is one of the most popular recipe in all over the world, especially in South America. It is made with chicken thighs, legs, breasts and wings, and some ingredients such as buttermilk, black pepper, ginger-garlic, red chili powder, rice flour and etc. I am going to cover my recipe in quit easy process. So that everyone can make it at home by following my recipe instruction step by step.
- 10 pcs Chicken with skin
- 1 tsp Coriander powder
- 1 tsp Crushed Black Pepper
- 1 tsp Red Chili Powder
- Salt to Taste
- 1 tsp Garam Masala
- 1 tsp Ginger Paste
- 1 tsp Garlic Paste
- 2 tsp Green Chili Paste
- 1 tsp Cumin Paste
- 1 pc Lemon Juice
- 1 cup Buttermilk/yogurt
- 1 tbsp Mustard Oil
- 8 tbsp Rice Flour
- 2 tbsp Red Chili Powder
- 1 tsp Crushed Black Pepper
- Salt to Taste
Take a whole chicken. Clean it. Cut the chicken with skin into 10 pieces: 4 breasts, 2 legs, 2 thighs, and 2 wings.
Dry all chicken pieces with a paper towel or tissue.
Properly, mix all the ingredients such as coriander powder, crushed black pepper, red chili powder, garam masala and salt in a big bowl.
In a large bowl, combine all chicken pieces, mixing ingredients, green chili paste, cumin paste, ginger-garlic paste, lemon juice, buttermilk/yogurt, and mustard oil. Now mix all together and put in the fridge for at least 4 hours but overnight is the best to make juicy on the inside of the fried chicken.
Mix all rice flour 8 tbsp, red chili powder 2 tbsp, crushed black pepper 1tsp, and salt to taste in a big bowl.
Now coat both sides of chicken with this mixing flour and put it another bowl or tray. One by one coat all the chicken pieces by this process.
Now your chicken is ready to fry.
Temperature is a crucial part to fry chicken. Your oil temperature should be around 350 to 375 Fahrenheit for proper crispy fried chicken. In a big pan heat oil to 375 Fahrenheit.
Now put 2 or 3 pieces of chicken into oil and fry them for 8 to 9 minutes each side.
Remove chicken from oil and let it drain on a wire rack for 3-4 minutes.
Fry all the chicken by using the same process.
Now serve it with hot tomato ketchup. If possible, you can serve with homemade chicken fried rice and Chinese chicken curry. Now enjoy your food!
